Ginger Lentil Soup

Ginger Lentil Soup

Servings: 2 | Preparation: 10 min | Cooking: 30 min

  • 1 large Onion
  • 4 Cloves of Garlic
  • 1 Stück frischen Ingwer
  • 2 EL Kokosöl
  • 250g red Lentils
  • 1 small Leek
  • 2 Potatoes
  • 3 Tomatoes
  • 1 Can of Coconut Milk (ca. 400g)
  • 700ml Vegetable Broth
  • Spices: curry, chili powder (as needed), salt, cardamom, sweet paprika
  • Fresh herbs of choice (e.g. cilantro or chives)
  1. Peel and dice the onion, garlic cloves, and ginger. Also dice the carrots and tomatoes into small cubes, and halve the leek, wash it, and cut it into half rings.
  2. Heat the oil in a pot and sauté the onion, garlic, and ginger. Then add the carrot and tomato cubes and fry for about 5 minutes.
  3. Wash the lentils and add them to the pot together with the leek, coconut milk, vegetable broth, and spices. Allow it to simmer on low heat for about 20 minutes.
  4. Taste the soup and garnish it in bowls with fresh herbs such as cilantro or chives according to your preference. I used flowers.
