Ginger Lentil Soup

Ingredients
- 1 large Onion
- 4 Cloves of Garlic
- 1 Stück frischen Ingwer
- 2 EL Kokosöl
- 250g red Lentils
- 1 small Leek
- 2 Potatoes
- 3 Tomatoes
- 1 Can of Coconut Milk (ca. 400g)
- 700ml Vegetable Broth
- Spices: curry, chili powder (as needed), salt, cardamom, sweet paprika
- Fresh herbs of choice (e.g. cilantro or chives)
How To
- Peel and dice the onion, garlic cloves, and ginger. Also dice the carrots and tomatoes into small cubes, and halve the leek, wash it, and cut it into half rings.
- Heat the oil in a pot and sauté the onion, garlic, and ginger. Then add the carrot and tomato cubes and fry for about 5 minutes.
- Wash the lentils and add them to the pot together with the leek, coconut milk, vegetable broth, and spices. Allow it to simmer on low heat for about 20 minutes.
- Taste the soup and garnish it in bowls with fresh herbs such as cilantro or chives according to your preference. I used flowers.
